Beef and Blue Cheese Salad

Serve 3-4 main dish or 6-8 side-dish
Ingredients:

  • 1 (10 ounce) package of mixed
    green leaves
  • ¼ pound of deli roast beef cut into
    thin strips
  • 1 large tomato seeded and chopped
    or 8 cherry tomatoes cut in halves.
  • ½ cup of crumbled Blue cheese
    or Gorgonzola
  • Black pepper to taste
  • 1 cup of croutons
  • ½ cup of Caesar or Italian dressing
  1. Combine mixed greens, roast beef,
    tomato, cheese, black pepper
    and croutons
  2. Drizzle with dressing; toss and serve
