“Simple” Southern Corn Bread, for my Girlfriends
- 1⁄4 cups of all-purpose flour
- 3⁄4 cup of white or yellow corn
meal - 1/8 cup of sugar
- 2 teaspoons of baking powder
- 1⁄4 teaspoon of kosher salt
- 1 cup of skim milk
- 1⁄4 cup of canola oil
- 2 egg whites
Preheat oven to 400, grease 8-9 inch pan. Mix together all dry ingredients. Stir in the skim milk, oil, and egg whites. Mix until all ingredients are combined. Pour the corn bread mixture into the prepared pan. Bake for 22-25 minutes, or until brown. Check with a toothpick to ensure doneness. The center should come out clean.
